Ingredients
- For dough
- Refined flour 125 gm
- Salt 2–3 gm
- Sugar 1 gm
- Oil 30-40 gm
- Water 40 gm
- Filling
- Boiled potatoes 375–400 gm
- Green chillies 4–6 gm
- Ginger 4–5 gm
- Coriander leaves 5–8 gm
- Prepared masala 8–9 gm
- Ghee 2–3 gm
- Masala
- Salt to tase
- Fennel powder 2gm
- Cumin powder 2gm
- Coriander powder 2gm
- Black peppercorns powder 1gm
- Broccoli 300-400gm
- Green Chilli (finely chopped) 12gm
- Garlic-Ginger (grated) 35gm
- Cashew 30gm
- Processed Cheese 50gm
- Chaat Masala 0.5gm
- Fresh Cream 30gm
- Corn Flour 15g
- Salt 3-4 (to taste)
- Black Pepper Powder 2gm
- Butter 15gm
- Hung Curd 200–250 g
Directions
- Prepare dough: Mix flour, salt, and sugar. Add oil and rub until crumbly.
- Add water gradually and knead into a firm dough. Rest for 15 minutes.
- Prepare filling: Take a bowl, mashed boiled potatoes, mix with other ingredients. Give it good mix.
- Shape samosa: Divide dough into balls and roll into oval shapes. Cut in half.
- Form a cone, fill with potato mixture, seal edges with water, and shape into samosa.
- Preheat air fryer: Preheat at 180°C for 3–5 minutes.
- Air fry: Brush samosas lightly with oil. Place in upper basket tray without overcrowding. Air fry at 180°C for 20 minutes, flipping halfway, until golden and crisp.
- Serve: Serve hot with chutney or ketchup.
- Prepare marinade base: Grind cashew, green chilli, and ginger-garlic into a smooth paste.
- Make marinade: In a bowl, combine paste with hung curd, fresh cream, corn flour, grated cheese, chaat masala, salt, and black pepper. Mix well.
- Prep broccoli: Cut broccoli into florets and blanch for 1–2 minutes. Pat dry completely.
- Marinate: Add broccoli to marinade and coat well. Rest for 20–30 minutes.
- Air fry: Place marinated broccoli in lower basket tray. Air fry at 180°C for 15 minutes, flipping halfway, until slightly charred.
- Serve: Serve hot with mint chutney.
