Ingredients

  • For dough
  • Refined flour 125 gm
  • Salt 2–3 gm
  • Sugar 1 gm
  • Oil 30-40 gm
  • Water 40 gm
  • Filling
  • Boiled potatoes 375–400 gm
  • Green chillies 4–6 gm
  • Ginger 4–5 gm
  • Coriander leaves 5–8 gm
  • Prepared masala 8–9 gm
  • Ghee 2–3 gm
  • Masala
  • Salt to tase
  • Fennel powder 2gm
  • Cumin powder 2gm
  • Coriander powder 2gm
  • Black peppercorns powder 1gm
  • Broccoli 300-400gm
  • Green Chilli (finely chopped) 12gm
  • Garlic-Ginger (grated) 35gm
  • Cashew 30gm
  • Processed Cheese 50gm
  • Chaat Masala 0.5gm
  • Fresh Cream 30gm
  • Corn Flour 15g
  • Salt 3-4 (to taste)
  • Black Pepper Powder 2gm
  • Butter 15gm
  • Hung Curd 200–250 g

Directions

  1. Prepare dough: Mix flour, salt, and sugar. Add oil and rub until crumbly.
  2. Add water gradually and knead into a firm dough. Rest for 15 minutes.
  3. Prepare filling: Take a bowl, mashed boiled potatoes, mix with other ingredients. Give it good mix.
  4. Shape samosa: Divide dough into balls and roll into oval shapes. Cut in half.
  5. Form a cone, fill with potato mixture, seal edges with water, and shape into samosa.
  6. Preheat air fryer: Preheat at 180°C for 3–5 minutes.
  7. Air fry: Brush samosas lightly with oil. Place in upper basket tray without overcrowding. Air fry at 180°C for 20 minutes, flipping halfway, until golden and crisp.
  8. Serve: Serve hot with chutney or ketchup.
  9. Prepare marinade base: Grind cashew, green chilli, and ginger-garlic into a smooth paste.
  10. Make marinade: In a bowl, combine paste with hung curd, fresh cream, corn flour, grated cheese, chaat masala, salt, and black pepper. Mix well.
  11. Prep broccoli: Cut broccoli into florets and blanch for 1–2 minutes. Pat dry completely.
  12. Marinate: Add broccoli to marinade and coat well. Rest for 20–30 minutes.
  13. Air fry: Place marinated broccoli in lower basket tray. Air fry at 180°C for 15 minutes, flipping halfway, until slightly charred.
  14. Serve: Serve hot with mint chutney.
