Baingan Bharta (Roasted Eggplant)

Smoky roasted eggplant prepared in the air fryer, perfect for making traditional baingan bharta or chokha.

Ingredients

  • Eggplant (Baingan) – 1 large
  • Garlic Cloves (finely chopped) – 4-5 pcs
  • Oil – 10 ml
  • Salt to taste

Directions

  1. Wash and dry the eggplant properly.
  2. Make slits in the eggplant and insert garlic cloves into the slits. Brush oil evenly over the eggplant surface.
  3. Select Roast mode at 200°C. Roast for 8–10 minutes depending on the size of the eggplant, turning halfway if required.
  4. Once roasted, peel the skin and mash the eggplant as needed for bharta or chokha preparations.
  5. For making your recipe (bharta/chokha), add choice of ingredients like chopped onion, coriander leaves, green chillies and in house spices etc. Serve hot & enjoy.
