Ninja CRISPi
Crisp, golden kachoris filled with a spiced green pea mixture and served with a fresh coriander and coconut chutney.

Ingredients
DOUGH
- All-purpose flour – 1¼ cups;
- Salt – ¼ tsp;
- Oil – 1 tbsp;
- Lukewarm water – 5 tbsp
FILLING
- Frozen peas, thawed – about 2 cups;
- Ginger, grated – 2 tsp;
- Garlic, finely chopped – 2 cloves;
- Black mustard seeds – ½ tsp;
- Garam masala – ½ tsp;
- Hot chilli powder – ½ tsp;
- Cinnamon powder – ½ tsp;
- Cumin powder – ½ tsp;
- Turmeric powder – ¼ tsp;
- Salt – ¾ tsp;
- Oil – 1 tbsp;
- Lemon juice – 1–2 tbsp.
Directions
To make the dough, add all-purpose flour and salt to a bowl. Add oil and mix well.
Gradually add lukewarm water and knead to form a soft dough. Cover and rest the dough while preparing the filling.
For the filling, blend the thawed peas into a coarse mixture.
Heat oil in a pan and add black mustard seeds. Once they begin to splutter, add ginger and garlic and sauté briefly.
Add the ground peas, garam masala, hot chilli powder, cinnamon powder, cumin powder, turmeric powder and salt. Cook until the mixture is dry and well combined. Add lemon juice and mix. Allow the filling to cool.
6Divide the dough into equal portions. Roll each portion into a small circle, place a portion of the pea filling in the centre, bring the edges together and seal. Gently flatten and shape into a kachori.
Place the prepared kachoris on crisper tray in the Ninja CRISPi cooking container and spray lightly with oil.
Select Air Fry mode and cook for 30 minutes, flipping the kachoris halfway through and spraying with a little more oil. Cook until golden and crisp.
Serve the crispy pea kachoris hot with the choice of chutney.
