Kothimbir vadi

A traditional Maharashtrian snack made with fresh coriander (kothimbir), gram flour, and spices—steamed and then pan-fried or air-fried until crisp.

Ingredients

  • Coriander leaves- washed, chopped - 90-100g
  • Besan- 150-200g
  • Ginger-garlic paste- 2tsp, 10g
  • Kashmiri red chilli powder- ¼tsp, 1.5g
  • Turmeric- ¼ tsp, 1.5g
  • Green chilli finely chopped - 1-2pc, 5-6g
  • Coriander powder- ¼tsp, 1.5g
  • Cumin powder ¼tsp, 1.5g
  • Sesame seeds 1tsp, 5g
  • Garam masala powder ¼tsp, 1.5g
  • Salt to taste
  • Lemon juice half
  • Oil- 4tsp 20ml
  • Water as required

Directions

  1. In a large mixing bowl add chopped coriander, besan and all other ingredients apart from water.
  2. Give it good mix, add water into batched and begin to knead to soft dough.
  3. Shape the dough to cylindrical shape/square cake shape greasing hand with oil.
  4. Take combi pan, pour 200mll / 1 coffee cup water, put crisper plate over it. Brush it with oil.
  5. Now, put dough over it insert the combi pan into Level 1. Close the door.
  6. Move the SmartSwitch to cooker mode, select steam function and time for 10minutes. Press start.
  7. Once done, remove cooked dough carefully. Chopped into desire shape. Put this on bake tray. Brush some oil on it,
  8. Move the SmartSwitch to airfry mode, select airfry function at 180°C for 10minutes. Press start.
  9. Once done, serve it with choice of peanut/green chutney.
