Lahsuni Baigan with rice
Baigan marinated with inhouse ingredients and Indian powdered spices like red chilli powder, turmeric, salt, cumin & pepper powder. With choice of rice like jeera or plain with few drops of ghee.

Ingredients
- Rice - 400gm
- Water - 900ml
- Oil/Butter/Ghee - 20gm
- Baigan (large) - 450-500g
- Onion (large, sliced) - 150–180g
- Tomato (large, chopped/grated) - 120–150g
- Garlic - 24–30g
- Green chilies - 10–12g
- Ginger - 12–15g
- Red chili powder - 2g
- Cooking oil - 55 g
- Turmeric powder - 2g
- Coriander powder - 2g
- Cumin seeds - 1.2g
- Mustard seeds - 1.2g
- Kasuri meethi (roughly ground) - 1g
- Salt - 5–10g
- Fresh coriander (garnishing) - 3–4 g
Directions
- Place all Level 1 ingredients in combi pan, mix it well. Slide the pan into Level 1.
- Chopped baigan into semi-thick slice & keep aside. Finely chopped the onion, tomato, garlic, green chillies and ginger and place these in bowl.
- Mix all the whole & powdered spices into chopped veggies followed by oil. Mix it well.
- Take bake tray, put crisper plate over it. Layer slice of baigan with spices mixed veggies on top of it & put it on crisper plate.
- Close the door and flip the SmartSwitch to COMBI COOKER mode. Select COMBI MEAL function, set temperature to 200°C and set time to 10 minutes. Press START to begin cooking (the unit will steam for 6-7 minutes before cooking).
- When cooking is complete, remove pan and tray. Serve hot rice with lahsuni baigan. Enjoy.
