Rava kesari (Kesari bhaat)

Ingredients

  • ¼cup ghee
  • Cashew 10pc
  • ½ cup rava/sooji/semolina
  • 1 cup water
  • ¾ cup sugar
  • 2 tbsp saffron water
  • ¼ tsp cardamom powder
  • Cardamom powder - 2 pinch

Directions

  1. Move the SmartSwitch to Air Fry Mode and insert the Combi Pan into Level 1.
  2. Select SEAR/SAUTÉ function, set the temperature to HI 5, and press the dial to start preheating.
  3. Add half of the ghee to the pan. Add cashews and roast until golden brown. Remove and keep aside for garnish.
  4. Add rava to the same pan and roast for 5–7 minutes, stirring continuously until light golden brown and aromatic.
  5. Carefully add water, saffron water, and saffron food color (optional). Mix well to avoid lumps.
  6. Cook until the rava absorbs all the water.
  7. Add sugar and elaichi powder, then stir continuously until the sugar completely dissolves and the mixture thickens.
  8. Once done, carefully remove the pan and add the remaining ghee. Mix well for a rich glossy texture.
  9. Garnish with roasted cashews and serve
