Rava kesari (Kesari bhaat)

Ingredients
- ¼cup ghee
- Cashew 10pc
- ½ cup rava/sooji/semolina
- 1 cup water
- ¾ cup sugar
- 2 tbsp saffron water
- ¼ tsp cardamom powder
- Cardamom powder - 2 pinch
Directions
- Move the SmartSwitch to Air Fry Mode and insert the Combi Pan into Level 1.
- Select SEAR/SAUTÉ function, set the temperature to HI 5, and press the dial to start preheating.
- Add half of the ghee to the pan. Add cashews and roast until golden brown. Remove and keep aside for garnish.
- Add rava to the same pan and roast for 5–7 minutes, stirring continuously until light golden brown and aromatic.
- Carefully add water, saffron water, and saffron food color (optional). Mix well to avoid lumps.
- Cook until the rava absorbs all the water.
- Add sugar and elaichi powder, then stir continuously until the sugar completely dissolves and the mixture thickens.
- Once done, carefully remove the pan and add the remaining ghee. Mix well for a rich glossy texture.
- Garnish with roasted cashews and serve
